Title: Red Potato Casserole

Yield: 2 Servings

2cChopped fresh tomatoes
2cPeeled, cubed red potatoes
1/2cDiced red onions
1/4cExtra virgin olive oil
1tbChopped fresh basil
2tbFinely chopped fresh parsley
2tsDried oregano
1/4cWater
1/2tsPaprika
3/4tsSalt
1/2tsFreshly ground black pepper
2cDiced baked tofu or firm tofu

Combine all the ingredients in a casserole dish and mix well. Cover and bake in a preheated 425 degree F oven for 45 minutes. Yield: 2 servings.

PERSONAL NOTE: I have no idea what is meant by baked tofu, and could find no reference to it in the Index.
